If the group would rather stay comfortable and go further, the air-conditioned boats are the better call. The Irish Cowboy and the Cowgirl both have cold cabins and private restrooms, which turns a hot July six-hour trip into something everyone enjoys rather than endures.

Charters leave in the morning, so the trip slots in ahead of everything else on the itinerary. A structure that works well: fish Saturday morning, get back early afternoon, drop the fillets at a hook-and-cook restaurant, and have the group dinner that night built around fish the bride caught.
